Mixing, Blending or Chopping? You Need a Blender or Stand Mixer!

Filed under: Living With Shopping, Snacks + More, World Of Nutrition — admin at 8:21 pm on Thursday, March 11, 2010

Appliances are a common fixutre of any kitchen these days. Having functions that are overlapping, they are sure to create confusion and possibly frustration for the customer. To be specific, we are talking about food processors, blenders, stick blenders and mixers. We know that, loosely speaking, they combine and prepare ingredients, but what is the real deal with them? What would be best for you and your kitchen? Let us take a quick survey of these appliances and see if we can clearly demarcate where the appliances duties begin and end.

Do not limit your use of a blender to just those smoothies and cocktails, because they are a great deal more versatile than that. Certain soups can be smoothed in the blender and it is a big help when making homemade dressings and sauces. Heavy duty blenders, like those offered by Vita-blend are extraordinarily versatile and even have solid blade containers that can be used for jobs normally associated with the food processor.

A person living alone and who is often blending and preparing single servings would get lots of of use out of a stick blender. Having said that, a very busy cook might need one as an auxiliary piece of equipment if there are often two dishes going that require blending (i.e., the stick blender can be hauled out if the blender is full). They are also great to have on hand if you want to mix gravies or soups on the stovetop.

Food processors are renowned for their versatility. First introduced in the early 1960s, the food processor has long been a must of restaurants, cafes and home kitchens alike. While food processors may initially seem very similar to blenders, they work with blades that can be removed and changed for specific tasks. Such blades include chopping, grating and cutting discs. Food processors differentiate from blenders because they do not require liquids to mix or chop food. This makes them ideal for chopping and slicing vegetables and other solids.

The essential functions of today’s home food processor include chopping fruit and vegetables, grinding nuts and seeds, kneading tortilla and bread dough, shredding salad, mixing soup and grating cheese.

KitchenAid, Cuisinart and French-made Magimix are traditionally the largest and most renowned manufacturers of food processors. Recently, Morphy Richards have launched a line of food processors to challenge these traditional giants of the appliance market.

Stores sold an incredible 1 billion pounds of unprepared kernels and shipped out over 245.000.000 pounds internationally in 2000, meaning it’s unsurprising that popcorn is one of America’s favorite treats. So if you want some, order from the market leader — delivering a million or more pounds each year to fans of gourmet popcorn balls. Since 1979, the firm has provided the nation with this toothsome treat in many wonderful flavors. The process starts with domestically grown corn carefully picked out to achieve the optimum level of flavor. With the purest corn oil, that taste’s preserved as the kernels pop, allowing other flavorings to be added. They then seal it up and send it out immediately — so that it stays fresh. Have you ever wanted a 6 gallon tin, full of popcorn? They have got you covered. So if you’ve a event that wants snacks laying on — or simply want to stock up enough to cater for movie night for a few weeks — you know what to order. Of course, everyone expects the buttered and plain varieties, but other flavors available may surprise you.

Please go to this marvelous webpage for gourmet popcorn instructions.

If the large tins are too large, or if you’re simply thinking about some other deal, the Popcorn Factory also sells their toothsome treats in boxes and tins. Designed to say “thank you”, to celebrate Hanukkah, or to send a message, they’re tailor made to be gifts. Do none of those work for you? You might prefer getting the package personalized with a funny image, apt note, or simply the recipient’s name. If you know exactly what you’re after, you could always place a big order. However, assortment packages and samplers offer lesser amounts of multiple kinds so the recipient can sample them all. Should you want to buy more than a small sample of multiple flavors, your smartest option is a tower. Quickly constructed by stacking boxes together and fastening them to each other, you can choose specific combinations or put together a custom stack. You can get popcorn in practically any flavor you’re likely to want from them. Order them as treats or as gifts. You’ll find no better way to make someone smile anywhere in the US.

What to do to make your chocolates attractive and tempting

Filed under: Business Opps, Culture, Snacks + More — admin at 8:18 pm on Monday, December 28, 2009

Eating delicious chocolates is nothing but an ecstatic experience with its creamy texture, lustrous sheen, and clean snap but did you know that these aren’t natural to chocolates but are imparted only by tempering, a process which involves heating, cooling and reheating chocolates at precise temperatures?

Tempering is a tough process because when you maintain temperatures, they should always be accurate at all times and there shouldn’t even be slight changes. This aspect of tempering is what unsettles even the more experienced chocolatiers, because of so many reasons:

  • This step of maintaining accurate temperatures is necessitated because the fatty acids of cocoa butter, what makes chocolates creamy, form six crystal structures and each behaves dominantly at a particular, specific temperature.
  • The specific temperature you should maintain is the one at which the type V crystals flourish and that doesn’t give scope to other types of crystals to form. This is because the type V crystals are the ones that give shine and snap to chocolate.
  • If you don’t control temperatures, you’ll allow other types of crystals to form and will interfere in the production of type V crystals, consequently spoiling the tempering process. You’ll be forced to repeat tempering until you get it right somehow.
  • In tabliering and seeding, the two methods with which you can do tempering by hand, maintaining specific temperatures is the rule of thumb.
  • You should also ensure the absence of moisture not only in your work area but also in the equipment you use, as well as employ a reliable thermometer to achieve tempering success.

Bulk production of chocolates would require the facility of tempering machine because several batches of chocolates can achieve unvarying quality with its help. Further, the hassle of maintaining specific temperatures is taken up by a computer chip; it’ll also retain chocolate’s tempered state longer. Since the time saved can be converted into concentrating on perfecting your chocolate making craft, in the long run you’d have made chocolates that pass the critical scrutiny of ever-discerning customers spectacularly.

It is important that you do know how to go about tempering by hand for when emergencies demand it. Still, investing in a chocolate tempering machine will only serve your business well in the long run.

Merry Means to Observe the Fresh Year with Friends and Kin

What could be better than inaugurating the fresh year with a potpourri of good foods? Kicking if off with a mixed bag of yummy treats, potables and dessert, of course. Many cultures have a custom of incorporating food into the New Year’s festivities, which is why we project planning a charming New Year’s midnight fiesta for acquaintances and family. Everybody knows a bit of glamour and decadence on New Year’s Eve. Rather than call for a cast of hundreds, request a tighter crew, say about 8-15 of nearest and beloved, to partake this marvelous event. Elegance and New Year’s Eve go hand in hand. It is really an affair that calls for the greatest of everything! Ring in the New Year with a flamboyant dinner party that’s all about china, silver, and epicurean recipes laced with Champagne!

Abide by our New Years Eve party ideas and points to keep party decorations plain and affordable by taking details that make a big impact. Finish the silver and bring out your greatest chinaware to go all out for a New Year’s Eve dinner. Give the table a rapturous affect with starlike napkin rings or festive place card holders. Spray paint 2 grand pots silver and plant sprouted herbs in them for festive table arrangements that are sustainable and mesh with the party’s food-oriented theme. You can also add a thick black ribbon around the pots for extra detail and pin them closed with rhinestone brooches to add a New Year’s sparkle. Instead of tea light candles, look for large, multi-wick (4 ins crosswise to 10 inches across) wax lights that make a visual impact and give off a lot of light. Contribute matching black ribbon and clasps near the bottom third to organise the look with the potted herbs.

The joyous celebration of the New Year is probably the world’s oldest. Inspire kids to think about the events of the past year with this fun learning activity of making a time capsule. They will each create a time capsule of important events from around the world and in their lives. Give each child an empty shoebox to decorate and fill. Provide old magazines, photos, coloring pages and memorabilia that youngsters can choose to fill their capsules. Older kids can write down interesting things that happened to them during the year. Be sure to tell kids to keep the time capsules until next year.

How to Temper by Hand the Classic Way

Filed under: Business Opps, Culture, Snacks + More — admin at 8:17 am on Friday, December 18, 2009

If you want there to be no disappointments in your attempts to make chocolate candy, then you should opt for tempering machines because tempering by hand may lead to failures even if there is a slight deviation in temperatures during the process. Being automated, these machines have a microprocessor to do this job accurately as well as keep the chocolate tempered for longer hours. But the disquieting factor with tempering by hand is that accurate maintenance of temperatures needs a lot of patience.

The growth of the billion-dollar chocolate industry is highly promising. But even in this modern age, there are traditional customers who only want handmade chocolates instead of the products churned out by chocolate tempering machines. Artisan-chocolatiers cater to this segment. Handmade chocolates involve manual tempering like tabliering, preferred by these artisans. Tabliering was developed in France and the chocolate is cooled on a heat-absorbing surface like a marble-slab in tabliering.

Moisture poses the threat of “seizing” chocolates during tabliering and to avoid this, the equipment used must be dry. “Seizing” makes the chocolates lumpy and not fit for dipping and molding. Rapid over-heating and freezing may also cause “seizing”.

Chocolate is cut into thin strips and placed on the upper pan of a double boiler. Other utensils include a knife, a chopping board, a spatula, a mixing bowl, a thermometer to measure low temperatures (like 82F) and a cookie sheet and must be pat dried with a paper towel.

Boil water on medium heat in the lower pan of the double boiler so that the strips in the upper pan reach their melting temperature of 108-115F slowly with constant stirring. The melting point of each variety of chocolate differs. Transfer this molten chocolate or the mush into a mixing bowl, always focusing on avoiding moisture. While pouring, the melted chocolate must flow smoothly and not be lumpy.

2/3 of this melted chocolate is separated and worked upon a marble slab with a spatula for cooling to a temperature of 80-82F; while you ensure that the temperature on the remaining 1/3 chocolate is 100F.

Then both the 2/3 and 1/3 of the mush are mixed and worked together till the whole cools to 80-82F. Next, ensure that reheating of dark chocolates is done up to 88-90F, semi-sweet chocolates up to 86-88F and milk chocolates to 82-84F. Your tempering is over and successful if the mush hardens around the tip of a knife into a glossy coat, after dipping it and letting dry for 5 minutes. Then you go to the next processes of dipping and molding.

You should repeat tempering if there has been a change in holding temperatures. One advice: the chocolate can stay tempered longer if it’s set on a heating pad while you’re working.
